Always look for a deep, rich green color with firm shiny skin. Zucchini is fat, cholesterol, and sodium free. Low in calories and high in Vitamin C. Zucchini also has significant amounts of Vitamin A, as well asCalcium and Iron. Available year-round with Florida as the leading producer. "Summer squash" varieties are picked while still immature and the skin is tender. The seeds are edible in all varieties. Handling tips: Zucchini need humidity so mist lightly. Display and store between 41 - 50 degrees. Zucchini is highly sensitive to freezing injury. |
